Salad
9oz mixed greens
1 pear, sliced
½ cup pitted and sliced Medjool dates
¼ cup pomegranate seeds
½ cup coarsely chopped walnuts or pecans
½ cup dried cranberries
3oz goat cheese, crumbled (I recommend Feta)

Put all ingredients in a salad bowl and toss in dressing.

Dressing
½ cup pomegranate juice
2T red wine vinegar
1-2t Dijon mustard
1T honey
½ cup olive oil

Combine all ingredients in a food processor; taste and adjust to your liking.
